Unfortunately Minecraft itself doesn‘t reveal measurable horse data to mathematically compare steeds. You must therefore manually test ride every tamed horse to gauge speed, jump height, health and other stats.
To demonstrate, here is data from my current survival server horse dynasty across various attributes:
